Tenerina Cake or Torta Tenerina

With a crunchy exterior and a melty soft chocolate heart is a mustr try for all chocolate lovers!

Torta tenerina is a typical Italian Cake from the city of Ferrara, in which, the story tells, it was invented to honor the wife of the second to last Italian king.
It is the perfect cake to bring to dinner with friends or to partys because it is made with few ingredients that most of us have at home all the time, and who does not like chocolate? It can also be made easily gluten-free by using your gluten-free flour of choice.
If you resist to eat it all at once, it last up to three days.
You will need:
4 eggs (yolks and whites separated)
100g butter
50g flour (gf if you want)
200g dark chocolate
130g sugar
Method:
Melt the chocolate in the microwave or in a water-bath.
Add the butter to the chocolate until everything is melted and well mixed.
While the butter chocolate mixture is cooling down, mix the sugar with the eggs' yolks until the mixture is fluffly and brighter. Add the chocolate and butter mixture when lukewarm.
Whipe the eggs'whites until you reach a firm foam and add it to the mixture, very gently with a spatula with movements from top to bottom.
As final step add the flour and mix gently.
Add the mixture in a greased cake tin (23 cm of diameter) and put it in the oven at 180°C for 30 min in a static oven.
