Apple Muffins

Enjoy them for breakfast, as a healty snack or whenever you want, this healty vegan muffins are a staple.

I have a good friends that is vegan and I used to struggle to prepare something for her when she would come over.

I found this recipe online and I have modify it a little to suit my taste, the muffins raise perfectly even without the use of eggs, there is no need to any particular ingredient and the outcome does not have anything to envy to a classic muffin.

Ingredients for 12 muffins

250g flour

90g caster sugar

50ml vegetable oil

120ml plant beverage

2 apples

cinnamon (optional)

15g baking soda

lemon zest

Method

1. Turn on your oven at 180°C

2. Cut the apples in small cubes

3. In a bowl mix the dry ingredients: flour, baking soda, cinnamon, lemon zest. In another bowl mix oil with plant bevarage and sugar, until it melts.

4. Add the wet ingredient to the dry ones and mix well.

5. As last step add the apples pieces, give it a quick mix and transef in a muffin tin lined with paper muffin liners.

6. Insert the baking tray in the oven for 20min.

7. Enjoy!
